Pesto Salmon Sliders or Burgers

Love a good burger but trying to stay healthy? Look no further than a delicious, quintessentially Alaskan salmon burger! Packed full of wild-caught salmon and hand-harvested sea asparagus, you’ll get a double-dose of Alaskan goodness in one meal with this recipe! Foraged & Found’s Sea Asparagus Pesto helps make any deliciousc fish sing with it's bright, fresh flavor; try it in this recipe or simply spread atop baked King or halibut.

Ingredients
 2 wild-caught Alaskan salmon
 1 panko bread crumbs
 1 large egg
 1 lemon, zest only
 24 butter or olive oil
Method
1

Combine all ingredients in a bowl. Form by hand into 4 equal-sized patties or scoop a loose ¼ cup of meat mixture and form into a slider. Place on a parchment-lined baking sheet and refrigerate for 15 minutes to 1 hour.

When ready to cook, heat butter or oil in a large skillet over medium heat (we think butter enhances the flavor of this dish and browns the patties a little better, but you can use olive oil or another preferred cooking oil like avocado oil).

Cook the patties on each side until browned and cooked through. You may need to add more butter or oil to the pan, as the patties can absorb it.

Serve on hamburger or slider buns spread with homemade tartar sauce made with Foraged & Found's kelp Dill Pickle Slices or pesto aioli made with the leftover Foraged & Found Sea Asparagus pesto.
